Chicken Casserole with White Wine and Quince Gravy (serves 4)
Description
CHICKEN CASSEROLE WITH  WHITE WINE AND QUINCE GRAVY (Serves 4)
·          2 kg whole chicken
·          300ml white wine
·          4 tbspns Quince Jelly
·          6 crushed garlic cloves
·          Fresh herbs of choice
·          25g butter
Heat the oven to 180C/gas mark 4
Place wine, Quince Jelly, garlic and herbs in a large casserole dish.  Add the chicken
Cover and cook for approx 1 hour, then remove lid and rub butter over chicken and season
Cook uncovered for further 1 hour.
Remove chicken from casserole and strain remaining juices for gravy
