Quince Jelly with Lamb or Quorn Mince (Serves 4)

QUINCE JELLY WITH LAMB OR QUORN MINCE (serves 4)
Heat 1 tbspn olive oil in a deep frying pan.  Add a chopped red onion and cook until soft.  Turn the pan down to half heat, and add
·          125g chopped mushrooms
·          1 yellow pepper, deseeded and chopped
·          4 small courgettes; thinly sliced
·          350g lamb or quorn mince
·          1 tbspn Quince Jelly
·          1 apple, peeled, cored and chopped
·          568ml vegetable stock
Cook and reduce, then serve with mashed potatoes
